Crunchy Fall Salad

To signify the crunchy leaves of fall, Josh is making this salad full of fall flavors.

Yields6 Servings

 12 cups Salad greens (mix spring or field greens with baby spinach)
 3 Sweet apples (honeycrisp, pink lady)
 1.50 cups Nuts roughly chopped (walnuts or pecans or use roasted pumpkin seeds)
 ¾ cup Feta cheese
 ½ cup Dried cranberries
Dressing
 2 cups Apple juice
 ¼ cup Apple cider vinegar
 4 tbsp Honey
 ½ tsp Black pepper - heaping
 ½ cup Vegetable oil

1. Peel, core, and slice or chop apples.
2. In a large bowl, toss the apples with the lettuce, nuts, feta cheese and cranberries
3. In a separate bowl, whisk together the dressing ingredients.
4. Just before serving, pour the dressing over the salad, toss again.
