Broccoli Cheddar Soup

Equipment
- Crockpot can be done on stovetop
Ingredients
- 1 medium onion
- 2 bay leaves
- 4 cloves garlic minced
- 8 cups chicken stock
- 1 cup heavy cream
- 2 cups sharp cheddar cheese
- 2 cups diced potatoes
- salt and pepper to taste
Instructions
- Put chicken stock, diced onion, minced garlic, bay leaves, potatoes, salt and pepper into crockpot.
- Set crockpot to low
- Cook for 8 hours
- remove the bay leaves and discard
- Use an immersion blender to puree all ingredients in the crockpot. If you don't have an immersion blender you can use a regular blender to puree the ingredients.
- Add the heavy cream and 1.5 cups of the sharp cheddar cheese.
- Cook until heated through and cheese is melted
- Serve with a sprinkling of cheese on top
