Broccoli Cheddar Soup

Equipment

  • Crockpot can be done on stovetop

Ingredients

  • 1 medium onion
  • 2 bay leaves
  • 4 cloves garlic minced
  • 8 cups chicken stock
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese
  • 2 cups diced potatoes
  • salt and pepper to taste

Instructions

  • Put chicken stock, diced onion, minced garlic, bay leaves, potatoes, salt and pepper into crockpot.
  • Set crockpot to low
  • Cook for 8 hours
  • remove the bay leaves and discard
  • Use an immersion blender to puree all ingredients in the crockpot. If you don't have an immersion blender you can use a regular blender to puree the ingredients.
  • Add the heavy cream and 1.5 cups of the sharp cheddar cheese.
  • Cook until heated through and cheese is melted
  • Serve with a sprinkling of cheese on top
