Put chicken stock, diced onion, minced garlic, bay leaves, potatoes, salt and pepper into crockpot.
Set crockpot to low
Cook for 8 hours
remove the bay leaves and discard
Use an immersion blender to puree all ingredients in the crockpot. If you don't have an immersion blender you can use a regular blender to puree the ingredients.
Add the heavy cream and 1.5 cups of the sharp cheddar cheese.
